Peaberry: red bourbon, catuaí, catucaí.

 

There’s something special about Ibiraci.

Tucked away on a high plateau in Brazil’s Alta Mogiana region, this small micro-area

is blessed with flat, fertile lands and volcanic soils. Mild, steady temperatures create

the perfect environment for growing coffees that speak for themselves.

Here, most farms are small and family-run. Knowledge is passed down through

generations, guided by a quiet conviction: true quality takes time. It’s not about quick

results — it’s about care, respect for the land, and doing things right, even when no

one is watching.

 

From this mindset comes our Peaberry lot. A peaberry is a rare natural mutation:

instead of two seeds forming inside the coffee cherry, there’s only one, smaller and

rounder. Peaberries make up just about 5% of the harvest and are prized for their

sweeter, more concentrated flavour.

 

After careful selection, the beans were sun-dried for six days, just enough to

preserve their natural complexity and richness.

 

The result is warm and comforting: a base of fudgy brownie, layered with notes of

crisp apple, nougat, and a gentle touch of salted caramel.
