Variedad Colombia: caturra and timor hybrid.
This microlot consists entirely of the Colombia variety, a hybrid of Caturra and Timor Hybrid developed by Colombia’s National Coffee Federation to improve leaf rust resistance while maintaining cup quality.
Only fully ripe cherries are harvested, then floated and hand-sorted to remove any defects. The cherries undergo a 30-hour underwater fermentation, followed by pulping, gentle washing, and drying in temperature-controlled conditions until optimal moisture content is reached.
The cup presents a clean and structured profile, with notes of blackberries, lime, cacao nibs, and sugar cane.
